This is Jamie Oliver’s recipe. I have not found a better recipe and have made this every year for the holidays since the first year my (now) husband and I started dating. There are just a few changes to Jamie’s original recipe… I do not add lime peel as I find it too bitter. Additionally, I halved the amount of sugar. Normally, when cooking with wine, I suggest buying a decent bottle; however, I have made this recipe with $20 bottles and $6 bottles and both turned out very well.
- 2 bottes Chianti or other Italian red wine
- 1 large orange
- 1 small lemon
- 1 small lime
- 1/2 cup organic cane sugar
- 6 whole cloves
- 1 stick cinnamon
- 3 fresh bay leaves
- 1 whole vanilla pod
- 2 whole star anise
- 1 whole nutmeg for grating
Peel wide, thin strips of peel from the orange and lemon, then juice the orange and lime.
Mix the orange juice, half the lime juice, the peels, sugar, cloves, cinnamon stick, bay leaves and 10-12 gratings of the nutmeg.
Halve the vanilla pod, scrape out the seeds and add the seeds and pod to the sugar mix, then add just enough wine to cover the mix... about 1/4 cup
Over low to medium heat, stirring constantly, bring to a boil. Keep it at a rolling boil for about 5 minutes, or until a thick syrup develops.
Once the syrup is ready, reduce the heat to low, then add the star anise and remainder of wine. Gently heat, but do not boil. Serve hot.
