This is a very easy recipe to mix up the day after Thanksgiving, Christmas or Easter… when you don’t feel like cooking, but you’ve got many mouths to feed and a ton of left-overs in the fridge. This recipe is just a suggested mixture of the most common side-dishes, but use whatever you have (Brussels Sprouts with bacon and/or stuffing goes very well). Just toss everything together with some beaten eggs and bake. Voila!
- 1/3 cup left-over carrots
- 1/3 cup left-over beans
- 1/3 cup left-over roast potatoes
- 1/2 cup left-over turkey (or chicken, duck, ham, etc) shredded
- 1/4 cup sharp cheddar cheese shredded
- 6 large eggs
- salt and pepper to taste
Preheat the oven to 350°F
Beat the eggs in a large bowl, then mix in the vegetables, meat, cheese, salt and pepper.
Grease a 6 inch cake tin and pour in the egg mixture.
Bake for 40 minutes or until cooked in the middle. Serve hot.
