In my home, Christmas doesn’t happen without a cheeseball. It is also fantastic as a NYE appetizer! My family recipe is made with Maclaren’s Imperial Cheese; however, as with the cheesy biscuits, I can’t find it in the U.S. and even if I could, I don’t think it is low-FODMAP. So I used sharp, aged cheddar (the older the cheese, the less lactose) and it tastes just the same. This is a really easy recipe that will impress your guest without you having to sweat it out in the kitchen for hours. Just blend all the ingredients in a food processor, refrigerate until firm and roll in some crushed nuts. This goes fantastically with my sourdough crackers.
- 4 oz lactose-free cream cheese
- 8 oz sharp cheddar cheese
- 1 tsp Worcestershire sauce
- 1/16 tsp cayenne
- 2 tbsp port wine
- 2 tbsp butter (1 oz)
- 1/4 cup crushed pecans
Mix cream cheese, cheddar cheese, Worcestershire sauce, cayenne, port wine, and butter in a food processor until fully incorporated. Refrigerate until firm.
Scoop the mix into a large piece of plastic wrap and roll into a sphere. Remove from the plastic wrap and gently roll in crushed pecans. Refrigerate until ready to serve.
