Germanic name meaning “hardy bear”, Bernards are made of two organic ingredients: fruit and gelatin. That’s it! I got the idea for these after my husband tried to do a 30 mile bike during week one of a 30 day reset. I know, not the best timing, the results were as you would expect: Weak, could barely finish, couldn’t walk for the rest of the night, couldn’t warm up, etc. I needed something I could give him for the road that was still reset and low-FODMAP friendly.
These colourful little bursts of fruit are ‘jellier’ than commercial varieties, if you would like them to be ‘gummier’, you will have to dry them. Be aware that drying can shrink them by almost half! My first gummy mold produced bears that were slightly smaller than commercial varieties. After drying, the were about the size of my pinky nail! Finally, they must be stored in the fridge, otherwise they will mold… all that sugar with no preservatives is a haven for spores! Mine last for about 2 weeks in the fridge.
All-organic energy chews for on-the-go
- 1 tbsp gelatin beef or vegan
- 1/3 cup fruit juice
Puree your fresh, organic fruit
Strain through cheese cloth to remove seeds
Slowly mix in gelatin
Gently heat until the liquid is runny, darker and glassy-looking
Pour into molds and allow to set for at least 20 minutes before trying to un-mold.
