I graduated in 2015 with a B.A. in Recreation and Health Education and certifications in both nutrition and group fitness. After graduation, I married my college sweetheart and we uprooted our small-town Canadian lives to move to Seattle. I spend my days working towards my Master’s in Recreation Therapy and tripping over our 100 lb GSD as I cook in our tiny kitchen.
Things haven’t always been so perfect, though; life threw me some curve balls in my late teens/ early 20’s. Through sheer determination I kept an outward appearance of health, continuing with school and sports, but the stress manifested physically through bouts of depression and severe IBS. It wasn’t until I committed to the low-FODMAP diet that I finally got a reprieve, eight years later! The near-instant results strengthened my belief that “food is medicine”, as Hippocrates so aptly surmised almost 2.5 thousand years ago!!!
It quickly became apparent that resources for the low-FODMAP diet are slim in North America. So I decided to combine my love for concocting new and delicious food with my background in nutrition and health to make this website! My goal is to provide you with low-FODMAP recipes that are easy to make and so delectable, you won’t feel like you’re on a restricted diet!
Panacea, by definition, is “a solution or remedy for all difficulties or diseases”.
‘panaceats’ [pan-uh–seet-s], a combination of panacea + eats, represents Hippocrates’
“let food be thy medicine and medicine be thy food”
